Going veggie!!
I am in the process of going to a vegetarian lifestyle. I have been cooking less meat over the last several years. I don't cook red meats anymore, but still prepare some chicken and fish. I have been doing less of the chicken and fish these last few months. I just wanted to share a recipe with you all that I got from a girlfriend over 15 years ago. I love these "meatballs" and whenever I serve them they go so quickly. Most people don't even realize that they aren't meat. Try them for yourselves and let me know what you think.
Veggie “Meatballs”
1 package Morning Star Breakfast patties
1 cup grated cheddar Cheese
½ cup. ground pecans
1 cup cracker meal or bread crumbs
1 onion finely chopped or minced
1 tsp garlic powder
4 eggs (beaten)
Break up breakfast patties into small parts. Add other ingredients. Mix together. Form small balls or patties and brown in vegetable oil.
For sauce:
Mix 1 part BBQ sauce with apricot preserves. Pour over meatballs and bake at 350° for 30-45 minutes. Enjoy!!
